Authentic Restaurant Brands has secured $325 million in flexible capital to open restaurants and acquire additional regional chains. The immediate question for its largest brand, Pollo Tropical, is how much of that money will reach its restaurants.
Authentic Restaurant Brands is an Austin-based restaurant holding company founded in 2021 as a subsidiary of private-equity firm Garnett Station Partners. It owns five regional concepts: Pollo Tropical, Primanti Bros., P.J. Whelihan’s, Mambo Seafood and Tavern in the Square. The company calls them “hometown hero” brands—established concepts with strong regional identities and room to grow.
Trimontium, a London-based asset manager, is providing the $325 million financing. The structure includes debt, equity and hybrid capital, and the parties indicated that additional funding could become available as Authentic grows.
The portfolio currently spans approximately 225 restaurants and more than $1 billion in combined annual revenue, according to figures cited by Nation’s Restaurant News. Authentic also reported four consecutive years of positive same-store sales growth across the platform.
Pollo Tropical is its largest concept. The Florida-centered fast-casual chain operates 122 locations and generated more than $327 million in U.S. sales last year, according to Technomic data reported by NRN.
That scale makes Pollo Tropical the most visible potential beneficiary—but potential is the important word.
Authentic said the financing can support organic expansion and acquisitions. It did not publish a brand-by-brand allocation. The full $325 million therefore cannot accurately be described as money earmarked for Pollo Tropical.
The capital gives Authentic two different growth engines.
The first is building within the portfolio it already owns. For Pollo Tropical, that could mean additional restaurants, stronger market density, technology investment or operational support. Concentrating development in and around existing markets could allow the chain to strengthen supply, advertising and management coverage before attempting a wider geographic leap.
The second is buying another company. Authentic’s model depends on acquiring regional restaurant brands and placing them on a shared platform while preserving the identities that made them valuable. Its most recently disclosed addition was Tavern in the Square, a 21-location New England casual-dining chain acquired last year.
Those two uses compete for capital and management attention. Every acquisition brings another leadership team, technology stack, menu, real-estate strategy and operating culture. The financial capacity to buy a brand is not the same as the organizational capacity to improve it.
That creates the central strategic question: Will Authentic use this investment primarily to deepen the five businesses it already owns, or to add the sixth?
For Pollo Tropical, the best outcome is not necessarily the largest immediate expansion announcement. The chain has a powerful regional identity built around citrus-marinated, fire-grilled chicken and Latin-Caribbean sides. Growth creates value only if new restaurants preserve the food, speed and cultural relevance that give the brand its following.
Authentic co-founder and CEO Alex Macedo said Trimontium designed the capital around the company’s current needs while preserving flexibility for future growth. Flexibility is valuable, but it also leaves the market without a precise development map.
Authentic has previously discussed the possibility of an initial public offering within three to five years, although no IPO has been formally announced. More restaurants, additional acquisitions and sustained comparable-sales growth could all build scale toward that possibility.
The confirmed development is substantial: Authentic Restaurant Brands now has $325 million of new financial capacity.
What happens next—new Pollo Tropical restaurants, investment across the existing portfolio, another acquisition or some combination—will reveal what kind of restaurant company Authentic intends to become.
