Mike's Red Tacos has a franchise pipeline far larger than its current restaurant base. CEO Andrew Feghali told QSR in a September 22 interview that the San Diego birria concept has sold roughly 350 franchise commitments. QSR described the chain as having three operating units at the time.
Those numbers measure different things. A commitment gives the company a potential development runway. It is not an open restaurant, a verified lease, or a guarantee that all signed units will be built.
The company had announced more than 200 planned locations when it launched its national franchise initiative in February. At that point, its company release described two restaurants and a third San Diego site expected in March. The later QSR interview puts the business at three units and roughly 350 commitments. The contrast shows how quickly agreements have accumulated, while the open-store footprint remains small.
Feghali brings an operator's view to the chief executive role. He told QSR he was the first Dave's Hot Chicken franchisee and has operated a broader portfolio that includes Little Caesars and Jersey Mike's. The company has recruited experienced leaders for operations, development and real estate, while founder Mike Touma remains responsible for protecting the food and brand.
Braisepoint's operating view: The next phase has less to do with signing another territory and more to do with turning agreements into good restaurants. Each franchisee needs suitable real estate, financing, equipment, trained managers and a supply chain that can reproduce the birria experience at scale.
The product adds a particular consistency test. Birria and its consomé are central to the brand's identity, so a rushed launch that compromises preparation could weaken the reason guests came. A detailed training system and a workable kitchen routine matter as much as the appetite for the concept.
Feghali told QSR the chain intends to open at a pace it can support. That is a useful restraint for a young franchisor. The most informative future numbers will be actual openings, restaurant-level economics and repeat guest response, alongside the number of commitments still in the pipeline.
The 350 figure is Feghali's company account in an interview, not an independently audited count of future stores.
