CAVA reached 500 restaurants with its September 23 opening in Minneapolis. The location at 622 Washington Avenue SE also brought the Mediterranean chain into Minnesota, expanding its presence to 30 states and the District of Columbia. CAVA’s announcement
The company says it is ahead of schedule toward its goal of at least 1,000 restaurants by 2032. That remains a growth target. The less visible part of reaching it is the work required to prepare another crew for opening day.
CAVA says a new-market opening typically involves approximately 45 to 50 team members, supported by two opening leads and 10 station trainers. Its development process also coordinates real estate, design, construction, operations and supply chain. CAVA
Those details give the milestone an operational dimension. Every new location needs people who can reproduce the food and service that made the concept worth expanding.
Recent financial results provide context for the growth. In the fiscal second quarter ended July 12, CAVA revenue rose 31.3% to $365.4 million. Same-restaurant sales increased 9.0%, including guest-traffic growth of 5.3%. The chain ended that quarter with 476 restaurants after 17 net openings. CAVA’s quarterly results
The sales measures should stay separate: revenue growth includes expansion, while same-restaurant sales describe performance at eligible existing restaurants. Neither figure, by itself, guarantees that the next market will perform equally well.
CAVA’s restaurant-level profit margin was 25.7%, down from 26.3% a year earlier, even as restaurant-level profit dollars increased. That measure excludes some company-level costs and should not be confused with net profit margin. Quarterly results
Braisepoint’s operating view: The opening crew is part of the growth investment. A kitchen can have the right equipment and ingredients yet struggle if employees have not learned how the stations work together under pressure.
Training has to cover more than producing one good bowl. Crews need to manage replenishment, explain unfamiliar ingredients, handle modifications and recover when a station falls behind. Those routines help turn a first visit into a reason to return.
There is also a capacity question for the expansion program itself. As openings multiply, experienced trainers have to prepare new teams while the established restaurants continue operating well. A rising store count makes the quality of that preparation more consequential.
CAVA’s milestone shows the footprint it has already built. Its next expansion will be worth watching through both the sales reports and the repeatability of the opening process.
